Welcome from another Suzuki/2 stroke enthusiast – I’ve not had a 500 but I restored a GT750 (quite) a few years back and currently have an RG500.
If I could offer any advice then it would be get as good a bike as you can. British bikes appear simple but they are hard to restore well. Japanese bikes are much easier to restore (despite the added complexity) as they are designed to be put together rapidly on assembly lines. Unfortunately, British bikes (including Scotts) often require “the knack” for many assembly jobs. If you go onto the Moss website mentioned below you will find lots of great advice and information.
